Setlocale(LC_TIME

this is the English setting in global.php

setlocale(LC_TIME, "en_GB.utf8"wink; // Linux Server (Windows may differ)

where to find the correct Danish setting? I've been googling and searching and searching and googling with no result :-(

Also the files must be UTF-8 as well as the database. In some instances you can get away with using Ansi if both files and Locale is set to Windows-1252 ( Ansi ).
But I would never recommended to try and cross breed them formats.

It boils down to 3 things
Database = UTF-8
Locale settings in the global = UTF-8
File format of the actual render and locale files = UTF-8
the right collation in the database is that:

utf8_unicode_ci

or should it be another?
That is correct.
RobiNN linked how the locale/lang/global.php should be set and you returned a faulty line ( ISO ) together with your example of the issue.
Update your global with above and make sure all is converted to UTF-8 and it should fix it for you.
